Sourdough Fermented Air Fried Potatoes

I’m *always* looking for new ways to use sourdough so when I saw @cultured.guru make sourdough fermented french fries, I knew I just HAVE to give it a try!

I quartered some small gold potatoes and let them to fermented in a solution of sourdough discard and water (about 2 tbsp discard to 2 cups water) at room temperature for 24 hours. Then, I rinsed the potatoes, dried them, and tossed them in olive oil and seasoning, and air fried until golden.

The potatoes taste like your typical air fried potatoes but with a tang. For folks that like tangy flavor spuds like me (i.e salt & vinegar, lemon pepper etc), this is a great way to add that flavor naturally!

Why Sourdough Fermentation?

Fermenting potatoes in sourdough starter not only adds a unique depth of flavor but also enhances their digestibility. The fermentation process breaks down some of the starches, making them easier to digest and allowing your body to absorb nutrients more efficiently. Plus, the tangy taste complements the natural earthiness of the potatoes, creating a delightful contrast.

Tips for Success

  • Choosing Potatoes: Yukon Gold or Russet potatoes are great choices for air frying due to their fluffy texture when cooked.
  • Customize Your Flavors: Feel free to experiment with different herbs and spices to suit your taste. Rosemary and garlic are classic pairings, but you can also try chili powder or Italian seasoning for a different twist.
  • Don’t Overcrowd the Basket: Make sure not to overcrowd the air fryer basket, as this can prevent the potatoes from getting crispy. Cook in batches if necessary.

Sourdough Fermented Air Fried Potatoes

Equipment

  • Air fryer

Ingredients
  

  • yukon gold or russet potatoes in your preferred cut
  • 2 tbsp sourdough discard
  • 2 cups water
  • olive oil
  • salt
  • pepper
  • additional herb/spice of choice optional

Instructions
 

  • Cut up enough potatoes, in your desired shape, to fill up a large mason jar.
  • Combine sourdough discard and water together and add it to the potatoes in the mason jar. Cover and let the potatoes ferment for 12-24hrs.

  • Rinse and drain the potatoes and pat them dry. Toss the potatoes with olive oil, salt, pepper, and your favorite herbs.

  • Preheat your air fryer to 400°F and cook the potatoes for about 15-20 minutes, shaking the basket/turning the potatoes halfway through, until golden and crispy.
  • Serve and enjoy hot.
