However, there was one thing I never quite loved about them—their hardness. For those big, chunky pieces, I’d have to bite down with my back teeth! This variation takes a delicious twist by using a light, airy, and crunchy honeycomb candy base, creating a delightful treat that’s a joy to bite into. The honeycomb melts in your mouth and is bursting with rich honey and toffee flavors. The addition of toasted black sesame seeds adds a wonderful nuttiness. Overall, its a lovely combination 🥰.

With just 4 simple ingredients—sugar, honey, baking soda, and black sesame seeds—these honeycomb brittles come together in less than 10 minutes! They’re quick, easy, and yet still delicious and with their airy texture, feels so special.

Shelf stable

One of the reasons these brittles make such great gifts is that they’re shelf-stable. As long as they’re stored in airtight packaging, they’ll stay fresh for up to a month. However, if you live in a humid climate, keep in mind that once opened, they won’t last as long. The honeycomb texture, supported by sugar, can collapse when exposed to moisture. But, these brittles are so simple and good, they will be gone before you know it!

Honeycomb Black Sesame Brittle

This variation on the traditional sesame brittle is airy and crunchy, making it a delight to bite into. It boasts sweet and nutty flavors of honey and toffee and is topped with roasted black sesame seeds for a lovely salty contrast.

Equipment

Ingredients

  • 110 g cane sugar
  • 30 g honey
  • 20 g water
  • 1 tsp baking soda
  • 15 g black sesame seeds

Instructions

  • Add black sesame seeds to a dry pan and toast them over medium heat until it is fragrant.
  • Line a baking sheet with a silicone baking mat or parchment paper.
  • Mix together honey, sugar and water in a pot over medium-high heat. Stir and cook the mixture until it reaches 300F and looks golden.
  • Turn off the heat and mix in the toasted black sesame seeds. Once incorporated, add in baking soda, quickly mixing to incorporate. The mixture will start foaming and tripling in size. Quickly pour the mixture onto the baking mat. Do not spread the candy.
  • Let the candy cool completely, about 1 hour, before breaking it into pieces.
  • Store in an airtight container and keep away from humidity or about 1-2 weeks.
