Hello there! My name is Xian (pronounced: Zai-Anne). I hail from the bustling streets of New York, a place that instilled in me a love for diverse cultures and cuisines from a young age. I eventually packed up my life and headed west, making California my home for nearly a decade. It was here, amidst the state’s dynamic and innovative culinary scene, that I discovered my passion for sourdough and fermentation, thanks in part to the perfect foggy climate and prime conditions for cultivating wild yeast.

However, the promise of Colorado’s breathtaking landscapes proved too strong to ignore. So, I embarked on a new chapter. Surrounded by the majestic Rocky Mountains and Denver’s vibrant, emerging food scene, I found new inspirations. I delved deeper into the world of fermentation, exploring beyond sourdough and kimchi.
