Lamination in the sourdough bread process refers to a technique where a the sourdough dough is stretched out thin on a wet surface, sprinkled with inclusions (optional), and then folded up (in letter fold form), and then rolled up, build strength in the dough as well as to to evenly incorporate extra ingredients into the dough.
