Honeycomb Black Sesame Brittle
This variation on the traditional sesame brittle is airy and crunchy, making it a delight to bite into. It boasts sweet and nutty flavors of honey and toffee and is topped with roasted black sesame seeds for a lovely salty contrast.
- 110 g cane sugar
- 30 g honey
- 20 g water
- 1 tsp baking soda
- 15 g black sesame seeds
Add black sesame seeds to a dry pan and toast them over medium heat until it is fragrant.
Line a baking sheet with a silicone baking mat or parchment paper.
Mix together honey, sugar and water in a pot over medium-high heat. Stir and cook the mixture until it reaches 300F and looks golden.
Turn off the heat and mix in the toasted black sesame seeds. Once incorporated, add in baking soda, quickly mixing to incorporate. The mixture will start foaming and tripling in size. Quickly pour the mixture onto the baking mat. Do not spread the candy.
Let the candy cool completely, about 1 hour, before breaking it into pieces.
Store in an airtight container and keep away from humidity or about 1-2 weeks.
