Sourdough Fermented Air Fried Potatoes

Ingredients
  

  • yukon gold or russet potatoes in your preferred cut
  • 2 tbsp sourdough discard
  • 2 cups water
  • olive oil
  • salt
  • pepper
  • additional herb/spice of choice optional

Instructions
 

  • Cut up enough potatoes, in your desired shape, to fill up a large mason jar.
  • Combine sourdough discard and water together and add it to the potatoes in the mason jar. Cover and let the potatoes ferment for 12-24hrs.

  • Rinse and drain the potatoes and pat them dry. Toss the potatoes with olive oil, salt, pepper, and your favorite herbs.

  • Preheat your air fryer to 400°F and cook the potatoes for about 15-20 minutes, shaking the basket/turning the potatoes halfway through, until golden and crispy.
  • Serve and enjoy hot.
