Sourdough Fermented Air Fried Potatoes

- yukon gold or russet potatoes in your preferred cut
- 2 tbsp sourdough discard
- 2 cups water
- olive oil
- salt
- pepper
- additional herb/spice of choice optional
Cut up enough potatoes, in your desired shape, to fill up a large mason jar.
Combine sourdough discard and water together and add it to the potatoes in the mason jar. Cover and let the potatoes ferment for 12-24hrs.
Rinse and drain the potatoes and pat them dry. Toss the potatoes with olive oil, salt, pepper, and your favorite herbs.
Preheat your air fryer to 400°F and cook the potatoes for about 15-20 minutes, shaking the basket/turning the potatoes halfway through, until golden and crispy.
Serve and enjoy hot.
